How to keep delivery food from arriving cold, leaking, or off-standard

Cold food, spilled sauce, or a messy plate sink your rating even when the taste is great. See how to protect quality all the way to the customer's door.

The food came out perfect from the kitchen, but it arrived cold, with the sauce spilled or the burger crushed. To the customer, that's your fault — and so is the low rating. The good news: arriving well is a matter of packaging, process, and timing, not luck.

Why this sinks your rating

In delivery, the customer judges what they receive, not what left the grill. A cold or leaking dish erases all the care of the preparation. Protecting the "last mile" is protecting your reputation.

The right packaging for each item

  • Hot: packaging that keeps heat and lets steam escape (so the crispy doesn't go soggy).
  • Cold/chilled: always separate from hot.
  • Liquids and sauces: containers that truly seal, and sauce on the side when it makes sense.
  • Assembled (burger, açaí): packaging that holds it in place without tipping.

Separate what can't mix

Hot next to chilled ruins both. Fried next to something that releases steam turns into soggy cardboard. Think of bag assembly as part of the recipe.

Control timing (and the delivery radius)

The longer on the road, the worse it arrives. Set a delivery radius your operation can serve with quality, and sync prep with the courier's departure — food sitting ready goes cold; a courier waiting causes delays.

Standardize the assembly

Create a standard for how each order is packed, so it doesn't depend on whoever is assembling that day. Standard = consistent quality, order after order.

Communicating the status ("out for delivery") helps the customer be ready to receive it — less food waiting in the lobby, fewer plates going cold.
